Carnaroli is a group “long A” Japonica type rice. Carnaroli is the most prestigious variety of Italian rice, used in every region. It has a large grain with a high percentage of amylose ensuring low glutinosity and excellent cooking resistance, which are qualities that make it the perfect ingredient for risottos and salads.
