Traditional, tinned copper fluted moulds specially designed for making canelés bordelais. Lined with pewter. Can be used for cold forming.
Copper gives perfect heat diffusion and will produce pastry with a caramelised surface. Do not heat above 230°C (melting point of pewter). Hand wash. Diameter 5,5 cm, height 5,2 cm, thickness 1 mm.
