Arborio is a group “long A” Japonica type rice. It is famous for being the variety that rivals Carnaroli rice: it is particularly associated with the idea of risotto abroad. It has a large grain with a good percentage of amylose, medium glutinosity and a good cooking resistance. It is especially suitable for preparing risottos, soups, salads and timbales.
