Remember to boil the pasta in plenty of well-salted water. It should be as salty as the Mediterranean. Throw the pasta into the boiling water and stir. The time of cooking varies with the form and things like the weather, but try a piece and strain when it is still slightly hard. Then toss with your favourite sauce.
