Round frying pan in carbon steel for quick searing, grilling and browning meat, less delicate fish and eggs. The Lyonnaise profile enables the food to slide easily onto a plate.
The black colour of the surface is due to thermal treatment and a temporary protection against oxidation; the pan is not coated.
Lyonnaise is a lightweight range, only 1-1,5mm thick, is easy to handle and ideal for gas. It is not recommended for induction because of the thin steel. For induction and ceramic stoves we recommend the Mineral B or Carbone plus series.

Welded iron handle, curved in the French style. Cleaning: deglaze, rinse with warm water, dry and oil lightly. Store in a dry place. Do not use detergents or put in the dishwasher. Seasoning will give the pan natural non-stick properties.

Many more sizes from 14 to 45cm available on request.

De Buyer have produced carbon-steel pans in the same factory since 1830!
