Paella rice

The Spanish Arroz Brazal Maratelli rice variety has excellent characteristics for paellaris. Its round, pearly grains absorb all the flavours of the broth and are resistant to braising. In addition to stews, the rice is well suited to risottos and oven dishes.
Cook for 16-17 minutes, after which the rice is left to rest for a while.
